Dairy Recipes for Shavuot
“ And thou shalt observe the feast of weeks, even of the first-fruits of wheat harvest, and the feast of ingathering at the turn of the year.”
On Shavuot we read the Book of Ruth. According to Jewish tradition, King David was born and died on Shavuot.
It is customary to eat dairy foods on Shavuot. The main reason for this custom is that upon receiving the Torah, including the kosher laws, the Jewish people could not cook meat in their pots, which had yet to be rendered kosher.

Cheese Balls
Ingredients:
• 1 1/2 cups farmer cheese
• 1/2 cup 5% soft white cheese, or low-fat ricotta
• 1 cup low-fat grated yellow cheese
• 1/4 cup scallions, minced
• 1 tablespoon Worcestershire sauce
• GARNISHES:
• 1 tablespoon sweet paprika
• 1/3 cup minced dill
• 1/3 cup minced parsley
• 1/3 cup roasted nuts, coarsely chopped
• 1/3 cup roasted sesame seeds

Preparation:
1. Mix all the ingredients together and refrigerate for 30 minutes.
2. Form the mixture into small balls and roll in any or all of the garnishes.
3. Refrigerate in an airtight container for up to 2 days.
Cheese Cake
Ingredients:
• 1 pound (500 grams) Israeli white cheese
• 8 ounces (250 grams) sour cream
• 1/2 cup sugar
• 2 eggs
• 3 flat tablespoons cake flour
• 1 teaspoon vanilla
• 8 ounces (250 grams) sour cream
• 3 tablespoons sugar

Preparation:
1. Preheat the oven to 325 degrees Fahrenheit (180 degrees Celsius).
2. Mix together first six ingredients (cheese, sour cream, sugar, eggs, flour and vanilla) until a smooth batter is formed.
3. Bake the cake in the oven for about 30 minutes or until the cake is set and starting to turn slightly brown and crack on top.
4. Turn the oven off and open the door and let the cake stand in the oven for a further 30 minutes before removing from the oven.
5. Mix together the last two ingredients (sour cream and sugar) for the topping.
6. When the cake has completely cooled, spread the topping on the cake.
